The inception of Onderstok – a term derived from Afrikaans meaning rootstock, symbolizing the strong foundation required for culinary innovation – was a collaborative vision. It evolved from a year-long dialogue between Bertus and Stellenbosch Wine Routes manager, Elmarie Rabe, exploring how their respective organizations could elevate the Stellenbosch experience. “Onderstok will be our seedbed for creativity, knowledge sharing, and excellence,” Bertus explains, emphasizing the initiative’s foundational principles.
The Onderstok network was formally established during a gathering of 18 elite chefs from the region. These chefs are not only renowned in South Africa, but are celebrated for their innovative approaches and the dynamic use of local produce. Shaun Scrooby, a world-traveled chef settled at Remhoogte Estate, highlights the rich local resources and the vibrant community as pivotal to leading Africa’s culinary discussions. The essence of Onderstok is to reignite the chefs’ passion and creativity, often subdued by the daily rush. It re-centres their focus on innovation and the joy of culinary arts. “In the rush of the day-to-day, it’s easy to lose sight of our passion – the true driver of our ventures,” Bertus notes, underscoring the transformative potential of this collaboration.
