Nestled inside the iconic Mount Nelson, A Belmond Hotel, Amura by Ángel León—a softly lit, subaquatic sanctuary evoking the serene majesty of a Cape kelp forest—is set to host an extraordinary collision of culinary stars.

For four exclusive nights, from 13 to 16 August 2026, the world-renowned resort presents a residency uniting six MICHELIN Stars, blending classic French precision with revolutionary Spanish ocean flair.

When French Mastery Meets Spanish Innovation

At the heart of this spectacular takeover is an extraordinary pairing. Chef Ángel León, famously dubbed the “Chef of the Sea,” has forever altered the fine dining landscape. Operating out of his three-MICHELIN-starred flagship Aponiente in Cádiz, León is celebrated for introducing marine plankton into gastronomy and championing ocean biodiversity. Amura marks his very first international venture outside of Spain, making the Mount Nelson a magnet for global gourmands.

Joining him is Chef Alain Roux, custodian of the legendary Roux culinary dynasty. As Chef Patron of The Waterside Inn, Roux presides over an unparalleled legacy: holding three MICHELIN stars continuously for 41 years—an unrivalled feat outside of France.

Four Nights of Unrivalled Epicurean Delights

The four-day residency promises guests an extraordinary journey, kicking off each evening with a chilled welcome glass of Moët & Chandon.

For the first three nights, Chef Alain takes complete command of the kitchen, presenting an exquisite six-course tasting menu that weaves South African produce through classical French technique. Guests can look forward to indulgences like a Truffle Croque Monsieur, seared scallops with aromatic vadouvan sauce, and a grand finish with the Waterside Inn’s legendary warm raspberry soufflé—a recipe perfected over half a century.

The grand finale on 16 August unveils an historic Four Hands Dinner between León and Roux. Diners will witness culinary history as Roux’s pan-fried lobster medallion with white port sauce shares the spotlight with León’s iconic, deeply savoury plankton risotto—a dish that distills the very essence of the ocean onto a plate.

Adding even more brilliance to the brigade, acclaimed South African Chef Wandile Mabaso and Waterside Inn Culinary Instructor Michael Nizzero will cook alongside Roux throughout the takeover.
